Dahl soup
1/3 - 1/4 of a package of Punjas Dahl soup mix
Cook in plenty (1.5 liters?) of water in pressure cooker for 45 minutes (we cooked it for 15 minutes) together with
1 teaspoon of curry powder (Haldi)
1 teaspoon salt
In another big pot fry the following in oil
3 big cloves of garlic, pounded or sliced
1/4 of a onion cut in small pieced
1/2 - 1 teaspoon och finely sliced chili with seeds
Fry for 2 minutes, then add
1/2 teaspoon of cumin seeds
1/2 teaspoon of mustard seeds
When the lentils are cooked it should be added to the fried vegetables and flavours. First add one big cup of cooked lentils, put on the lid quickly not to loose any flavour. Then add the rest of the cooked lentils. Boil for a few minutes.
Add salt.
Bean curry
Break green beens in 2 cm pieces
Fry for 2 minutes in oil
1/2 onion, sliced
red chili, sliced
Add to the frying pan
1 teaspoon hot masala
1 teaspoon curry powder (Haldi)
Add the beans
1 tablespoon garlic, sliced or pounded
1 piece of canned whole tomatoes, mashed
salt
Put on the lid and fry for about 5 minutes
Add 1 dl of water
1 teaspoon/pinch of soy sauce
Cook for 10 minutes
Serve with roti or rice
Pumpkin curry
Fry in oil for a few minutes
1/4 onion, sliced
1 cm ginger, sliced
garlic
red chili, sliced
Add
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
2 teaspoons hot masala
2 teaspoons curry powder (Haldi)
Add
1 small pumpkin, cut in small pieces
1 teaspoon salt
Put on the lid and cook until the pumpkin is soft. Stir once in a while.
Add 1 can of mashed whole tomatoes
Add 1/2 cup water, cook for 5-10 minutes
When the pumpkin is soft, mesh it with a wooden spoon
Serve with roti or rice
Roti
4 cups of flour
add boiling water little by little, mix well.
Knead the dough until soft.
Add 1 teaspoon of oil
Make small pieces, put on flour and make thin breads.
Fry on both sides in a frying pan.
Press it down to the pan to get a nice colour
Tomato chutney
Fry
1/2-1 onion, sliced
2 garlic cloves, cut in small pieces
red chili, sliced
Add
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1 teaspoon hot masala
1 teaspoon curry powder (Haldi)
1/2 - 1 teaspoon salt
1 tablespoon sugar
Add 1 can of whole tomatoes, mashed
3 leaves of fresh coriander leaves (Dania), sliced
Boil for 5 minutes.
