The forecast said the wind where going to give up around 1600 today. But so far it continues and we have a lot of rain now.

Here is a recipe from Paul Copeland on what to do when you have to many bananas:
 
Hi Salsa. I hope you are all well and not Banana’s lol.
Here is a recipe typical from when I was younger lol. Its like a thick smaller pancake, very yummy.

This recipe is perfect for when you have over-ripe bananas. Don’t throw them away or use them up in the usual cake. Try something different and use them in delish banana fritters.

Serves 4-6

To make Banana Fritters, you will need:

3 ripe bananas
1 egg
1 Tsp of vanilla extract
1/2 Tsp of cinnamon
1/4 Tsp of nutmeg
1/2 c of sugar
2 c of flour
1 Tbsp baking powder
1/4-1/2 c milk

How to make Banana Fritters:

Start by peeling the bananas. Put the bananas into a bowl and mash them well.
In a separate bowl, beat the egg, sugar, vanilla, cinnamon, and nutmeg.
Combine the egg mixture with the mashed bananas and mix well.

Next, shift dry ingredients into the banana/egg mixture and stir.
Add a little milk if the batter seems a little to thick, approx. 1/4 – 1/2 cup.
Add oil to a frying pan and place on medium high heat.
Once hot, drop spoonfuls of the batter into the hot oiled frying pan, as you would pikelets.

Flip when you see the edges starting to get brown and golden.
Lastly, combine cinnamon and sugar together to create the cinnamon sugar.
Sprinkle on top of the fritters once they are finished cooking and still hot.
Serve and enjoy!
