One of the truly delightful secrets we found only on the west coast islands of Inishbofin and Arranmore was the process of a folk evening. From 3.00pm ish a random group or groups would assemble in a pub or bar and play until around 7.00pm. They would then wander up to the nearby hotel and another session would last from 10.00pm until around midnight or so and finally another session would round off the period from 1.00am until the musicians started falling off their stools at whatever o'clock. Being English softies we never made it right through, but my goodness what a lovely experience were our brief submersions.
Another secret of north west Ireland in the apple pie, a delight preferred over most other desserts and on prominent display to tempt the shopper in all supermarkets. Short, short pastry and yummy apples, we made each one last four nights and they were delicious.
