The history of street Georgetown’s magnificent street food is simple.  Chinese men came here to work leaving there wives behind.  So they had nobody to cook for them.  In the end most stayed and their wives joined them.  You need to bring a guide, though.  Some of the food is complicated and the variety is vast.  It would take a lifetime to learn it all.  I cannot remember any of the names.  But the food is fantastic albeit there are some things you may wish to avoid.  Like the black eggs…
