On our way around the island we came across a traditional Rum Factory.
Here the sugar cane is still cut by hand in the local fields and crushed using a water wheel to provide the power.
 
The milky liquid thus extracted is boiled to concentrate the sugar then fermented in great vats.
 
Finally distillation takes place and produces Rum with 75% alcohol.
 
They have to dilute it to 69% as Customs will not let them sell it this strong!
 
Not surprising as the sample we tasted was like paint stripper on the mouth....
