today’s position plotted on the chart. I still use the Carib time.
I woke up at three, normally at 4, by 6.20 the Sunday lunch was cooked. In
St Lucia I was talking to a lady shopper by a counter that had dry meat and
fish. Salted, after a long chat I bought a pkt of each. The herrings you can eat
as they are but the pork you have to soak and get rid of the salt. So I soaked
the meat overnight changed the water again this morning. I chopped an onion, a
clove of garlic, origano and a tin of whole tomatoes. Gave it a blast in the
pressure cooker and Bob’s you uncle. I had a bite during lunch time and tasted
fine. It had to be done early otherwise the meat would have been in the sun all
day. All I have to do later is prepare a rice to go with the meat.
