Mr Hendry was our guide at the Belmont Plantation where Cocoa beans are processed to be made into organic dark chocolate. The plantation has been on the go for over three hundred years. Mr. Hendry is only 60 but he has worked here for 49 years!

The Cocoa farmers sell the beans to the processing plant on a Wednesday. Land Rovers are the chosen vehicle.
This' Landy' belongs to one of the farmers and has been in regular service for 38 years.
The tubs of beans are emptied onto the sorting tray to get rid of excess water and bits of husk/twigs etc.
The beans are placed in large fermenting 'bins' for 7 to 9 days.
Helen helps Hendry pull out the drying tray. The beans are dried in the sun for seven days.
