I can - hand on heart - say that these are the best fish cakes I have ever made. Mahi Mahi is a very delicious fish and this one was ocean fresh! It was also young fish, so light and delicate! I sprinkled a bit of chili flakes in with the egg, flour, salt, pepper, and red onion, but just a bit so as not to mask the fish. Serve warm, as finger food, with a large glass of very cold beer, ideally somewhere in the Caribbean at sundowner time!
