I started making this as a way of using up oldish bananas. Now, I buy the
bananas especially to make this.
Bit of butter, good squeeze of honey, a large slug of rum and at least 2
peeled bananas per person, all in a frying pan over not-maximum heat on the
gas. The bananas can be whole or in bits. Oldish (softer) bananas are best,
blackish outside but not inside.
After heating for less than a minute the whole lot heats up and WOOF! - the
rum starts to burn off with an impressive flame perhaps 1-2 feet high.
Yeehah! You can panic now and set the place on fire, or (better) stay calm
just move pan a little away from the flame to control things, and get some
photos.
The flame is just the alcohol burning off, of course. You can blow it out
or let it burn – after a minute or so there’ll be no alcohol but it’s all
still very rum-flavoured.
You’re only heating the bananas and syrup, not “cooking” anything really,
so it’s “done” in 1-2 minutes. Add cream or ice cream if there’s anything
left of your galley/boat.
